She spent her childhood in Pembroke Pines, Florida and attended classes at Cooper City High School.
On July 19, 1994 she married Matt Martinez, an Arena football player, and they have twin sons, Jake and Hunter. They divorced in 1996 and between 2002 and 2005 Niki dated Keith Urban.
Her career as a model started at the age of 13. She won the Fresh Faces contest in New York City and a 500,000 dollars modeling contract.
In 1997, 1998, 1999 she appeared in Sports Illustrated Swimsuit Issue.
On April 29, 2001 she had a car accident in Atlanta, Georgia and had at least 56 operations and physical therapy.
